These are a fruity mushroom that has a scent of apricots when fresh. They have a rich buttery flavor with a meat like texture. Avoid using chanterelles with ingredients that have strong flavors, such as garlic or spices.
Peppery and earthy in flavour chanterelles are best enjoyed sautéed with butter, shallots and a few spoons of heavy cream.
